Forged is now on the menu at our second restaurant in Singapore, Fura.
Founded by Chef Christina Rasmussen and Mixologist Sasha Wijidessa, Fura is a step into the future of food, and now one of our first Forgers.
Previously the Head of Foraging at three-Michelin-starred Noma, Christina has created an entirely new dish yet nostalgic dish featuring Forged Parfait, pairing our cultured Japanese quail with hazelnut biscuit, malt apple and a dill creme fraiche, topped with an onion crisp. Christina calls it 'A Quail Walks Into A Bar'.
"I always have a drawing board of flavour combinations or dishes I want to add on or change out to our menu," says Christina. "My grandmother lives in the south of France in the mountains and receives a lot of the game hunted on her property. A nostalgic flavour combination from my childhood is pork or fowl, cooked and paired with apples and onions. I love a good sweet and savoury pairing – adding in hazelnut oil and almond flour to the components of the dish highlight the slight nuttiness of the parfait."
